Choice of field is important but don't get too bogged down by it (sorry no pun intended!).

Don't see much mention here of being more or less into wind? Energy is proportional to speed squared so whatever happens make sure you are more or less into wind and not downwind.

If you're strapped in and you maintain flying speed (don't stall!) and touchdown at minimum reasonable airspeed and you've done the crash checks then there's a fair chance you and all the passengers will walk away from the wreckage.

I always like simulating a partial engine failure rather than a total failure to see whether this has been taught and absorbed. Or I say "ok you've got a very rough running engine now - show me what you'd do!". Apart from the usual priority doing trouble finding checks am really looking for them to point the a/c at the nearest suitable airfield and getting some more height on, getting overhead said field and then closing the throttle and doing a forced landing without power on one of the best fields around!
