Engine out performance

I am after information on the (possibly various) techniques used to transition from V2 climb to Vsec on reaching acceleration altitude particularly with regard to flight guidance. For instance the use of altitude hold to fly a level segment, I would imagine that this would result in the shortest acceleration segment given there is no altitude gain. What techniques are used for engine out certification?
