Does anyone have any suggestions for useful books and internet resources for in-depth information on the principles/workings of Radar and RF? I require them for use at work.

Try this link which will take you to the Aeromart site who advertise various publications which may assist. For avionic matters in general on a wide range of systems I would particulary recommend "Avionic Fundamentals" ISBN 0-89100-293-6 which was prepared and developed by United Airlines. I do not think there is a better book to explain the fundamentals.
