Roles which are not protected (ie prescribed by regulation or law) can mean pretty much anything. However, in general, operations engineering covers

(a) analysis and preparation of aircraft scheduled performance

(b) analysis and other studies of aircraft performance in line operations .. eg fuel use studies, optimising profiles, etc

(c) aircraft weight control (otherwise known as weight and balance). This covers weighing control and loading systems design and control
