Let me guess, you went on holiday to southern Spain and like many before you, you fell in love with it? Sorry I don't know of any MO's there; there must be one or two I suppose, but most UK aircraft only stage through there, dropping off and picking up the happy holiday makers.
The reason that I reply to this posting is that I have a similar question regarding the work situation in Palma. I would love to live and work in Mallorca, and I have convinced my wife that it would be nice to go over there too. But as a licensed tech with approvals on 757 is there anyone who I could work for in Palma?

For 757 in PMI try Air Europa, who do their line checks there, also LTE.
I worked with PMI company holding Spanish authorisation based on my UK AMEL. A great bunch of people at PMI, TFS, ACE etc.
If you are based in PMI you will be expected to do a stint in TFS during the winter!Tough eh!
Should be even easier to get a job if you have a JAR 66 B1 or B2.
The charter companies at PMI are like the UK, everyone has worked at other companies over the years.
The hardest thing to get used to are the 1 hour breakfasts & 3 hour lunches. If you can't beat them join them.
