Flight Simulator 2004. Not FSX unless you have a super good computer. Then hook it upto VATSIM. About as realistic as you get without actually getting in an aircraft.
Another fun thing is type homebuilt cockpits into google. Now that takes obsession with a game to all new levels.

I like FSX, it runs well i my 2.23ghz HP510 laptop without any problems so long as all the settings are set at half, cockpit detail set at full.
Especially like the 3d cockpits, them seem to have the response closer to to a real aircraft than previous versions.
I was initially put off by people moaning how poor it was with the scenery turned up, but in reality, turn the scenery down, looks far more realistic.
