Golden Wings Flight School at the Los Brasiles Airport (just North of Managua) is your best bet.
Their website appears to be down today, but here they are on Facebook:

Yes, Golden Wings is the only flight school here. In order to fly with your PPL from another country you will need to convert it to Nicaraguan PPL. Provided your PPL is issued in an ICAO country you will not have any problems. The process takes about 45 days (The local authority here will need to contact the authority in your country to verify your information).

Alternatively, if you don't have the luxury of waiting that long time for the foreign license validation, you should be able to arrange for an instructor or another pilot to ride shotgun.

Dear Panama Jack and chitolin, many thanks for the information.
I failed to check the site for a while and already in Managua, I had a chance to visit INAC at the Managua Airport. They also provided me the same Golden Wings name and Captain Marlon.
He told me the same procedure saying firstly I need to convert to Nicaraguan licence.
What is not clear for me is that even just for flying with the pilot/instructor, is the conversion required?

Nope. If you'd like to build time here then you will need to convert your license. If it's just for fun you can fly with any of the instructors or any pilot licensed here.

Dear chitolin and Panama Jack,
Thanks to your information, I could have a good flight at Golden Wings to Masaya, Granada and the Pacific Coast in C-172.
Though it was windy and bumpy, the view of volcanos, the Lago Nicaragua and the coasts were beautiful.
Next time I will be back in October with longer schedule. I will apply for the conversion next time.
The club has C-152, C-172, Piper Seneca and some other aircrafts. They are quite freindly and welcome every visitor.
Gracias Nicaragua!
