Is there something I can retrofit to an R44 helicopter that will record information regarding rotor speed, engine rpm, manifold pressure etc time of day etc. If I was going to allow a school to use the helicopter I would feel much more comfortable having this information. Thanks. 👍🏻

Don't worry about it. Should your R44 have an accident PPRuNe will have them sorted for you.

Perkins Technologies Australia - spinoff from Larry Perkins - Perkins Engineering. V8 Supercar driver/engineer.
Now owned by TAE Aerospace. Probably does what you want if you are serious and have that sort of coin. It does engine and I think airframe flight data to some extent.
Approvals may be a minefield.

The easy solution which requires no certification is a go pro looking at the panel. School has to record each flight !
Bit boring looking at all of the footage !!!!!

I'd say "Eyes in the Sky" (the product that georgetw referred to) are on the right track. Some of the other solutions just collect engine data, which is not enough to investigate an accident, let alone to track exceedances.
You need pressure altitude and OAT to determine max cont power, max take-off power, max avail power and VNE. You need IAS to compare against VNE and other prescribed manoeuvre speeds. Etc.
In an aircraft with 'steam gauges' this practically can only be picked up visually. However, as the demo on Patterson's website shows, lack of resolution and ever changing lighting condition including stark shadows can be a formidable challenge when trying to read all this data, let alone have it analysed automatically.
No yet, but it's coming. They are busy digitising all of the gauges behind the scenes so that the data is available digitally for a recorder. I would expect it to appear across the range in a year or two.

The European Union Aviation Safety Agency (EASA) is recommending the installation of flight recorders on Part 27 helicopters, those with mtows of 7,000 pounds or less and nine or fewer passenger seats. In a recent EASA safety information bulletin (https://ad.easa.europa.eu/ad/2019-15) (SIB), EASA said that although the recommendation falls short of a mandate, the agency “recognizes the potential safety enhancement that can be achieved through this equipment.”
