I have a Denmark-based, UK-authorized examiner to sign in my UK-issued EASA license.

I need to revalidate my SEP PPL and have flown the mandatory 12 hours and 1 training flight.

We are unclear if there is any paperwork involved with the SEP revalidation. Historically it was not required but it's been a while since last time. And I have transitioned from a JAA license to EASA.

With my MEP/IR renewal there was a slew of forms.

A non UK Examiner cannot sign your licence for Revalidation by Experience. Only a UK Examiner or UK FI with FCL945 privileges can do that. Any authorisation to sign UK licences is for revalidation by Prof Check.
CAA Website:
Revalidation by experience

If you are revalidating your SEP by experience and are flying in a European Member State, please note that a Certificate of Revalidation held on a licence issued by the UK cannot be signed by a non-UK EASA examiner.

SEP revalidation by experience can be signed in a UK issued licence by an examiner holding a valid UK issued Part-FCL examiner certificate or a Flight Instructor with the privileges of FCL.945.

UK CAA confirms that to revalidate a SEP with experience requires the examiner to have a UK-issued examiner authorization.

Only revalidation via a skills test can be accomplished by an examiner with a non-UK issued examiner authorization.

You cannot revalidate by a 'skills test'. It is a proficiency check.

Only revalidation via a skills test proficiency check can be accomplished by an examiner with a non-UK issued examiner authorization.

However, that alone does not entitle the non-UK examiner to endorse a UK licence. To endorse a Certificate of Revalidation within a UK licence, the examiner is required to have received specific authorisation. The UK CAA usually provide a one-off authorisation to do so along with the e-mail designating them for the proficiency check. See EASA Examiner Differences document and IN 2016-003 para 6 (https://publicapps.caa.co.uk/docs/33/InformationNotice%202016003.pdf).

That part I know since I used the same non-UK examiner for a MEP/IR renewal and went through the circus of getting the permission from the UK CAA.
