Just wondered the reasons behind this procedure and where it is written down? Also, why does this not happen elsewhere?

Genuine Q from a LGW operating pilot. Any ATC input greatly received.

A380 Localiser critical area is significantly longer than for other types, so if an A380 rolls down the runway, it will infringe the critical area.

I'm not sure of the dimensions of this for Gatwick, but I imagine that's the reason for the following aircraft to be on an RNAV approach.
