Hi! This info from AFM
• Performance:
The following performance penalties are applicable:
‐ Takeoff and approach climb performance limiting weights are reduced by 1 180 kg
(2 601 lb)
‐ En route performance limiting weight is reduced by 1 620 kg (3 571 lb)
‐ Fuel consumption is increased by 3.14 %.

Can any one tell me what does it mean 'En route performance''?
Does it mean ZFW?

Why would it mean zero fuel weight? That is not related to en-route performance in any way. I would assume it would be related to any enroute performance charts such as drift down, max cruise altitude, etc.

I don't have a320 manuals so I don't know specifics, it's just an educated guess. I do know it has nothing to do with the ZFW which is a structural limit.

what about increasing the real mass of the day with the penalty addendum, and only thence enter the charts / tables?

Enroute performance limiting weight is decided by terrain clearance requirement enroute. Drift down altitude will decide the limit weight which will be reduced by the said amount.
