Is it a requirement to have two sets of approach plates , or is one to share sufficient ?

I am looking for cool facts, EASA reg, not opinions :-)

(we are talking commercial ops on "big" jets)

One to share is legal. There are several business jet operators who only carry one set of plates - even operating under airline regs. The Pilot Flying uses the chart to set up and brief the approach, and then hands the chart to the pilot monitoring to monitor the various restrictions when flying the approach.
