How do you guys (especially in mountain / bush flying) handle conditions that are off limits in the POH performance charts?

For instance, the Cherokee POH take-off data goes "only" to 90 degrees Fahrenheit. What if you got 110 degrees F? Would it be risky to extrapolate? Measure on your own? Get more experience?

As an aside, I'm surprised that the IMHO quite significant density-altitude effect on Vx/Vy is not mentioned much more in the POH or even PPL ground school. Climbing with a Cherokee at 78 kias above 5000 ft DA will not give much joy.
