The FAA requires new Part 121 arlines to have 5 positions--Ops, Chief Pilot, Safety, Maint. and Inspector. I would like to know if there are similar requirements in the EU specifically the UK?

We don't have 'Part 121 arlines' :)

Definitey. UK AOC holders needs to have specified and appropriate post holders such as chief pilot, chief steward, maintenance and so on.

Hopefully 'Chief Steward' was 't-i-c' - they normally self-appointhttp://images.ibsrv.net/ibsrv/res/src:www.pprune.org/get/images/smilies/smile.gif
