Recently returned on an EZ A319 flight and it appeared that the landing was done with slats only. The flaps were not used at all. Not seen this before - is it commonplace and if not when is it used?

It is only done if flaps are jammed.

I want to find out how you've come to this opinion. Normally as a pax, if I can see the slats, I can't see the flaps and vice versa!

Been Boeing for a while now, but if my memory serves me right Flaps 1 gives you slats only (I'm sure you used to get Flaps 1+F for departure, but may be wrong). Seeing as though normal landings are either Flaps 3 or Full you will have both flaps and slats.
