how do you apply lateral separation achieved by reference to different geographic locations ? What is the lateral separation you use?

Which class airspace, which service? you're being very broad in your question

In Ukraine according to documents we have 20 km (10.8 n.m.) for opposite and crossing directions, 10 km (5.4 n.m.) for same direction traffic. And it does not depend on altitude - same separation for 2000 feet and FL 410)

He (or she) appears to be asking about GEOGRAPHIC separation which is a form of lateral separation. As you are in Europe I don't know what the requirements are there. It is commonly used in NZ up to 6000ft AMSL but I won't bother explaining it as it is probably completely different over there.
