During a recent flight out of Nuremberg (as a passenger on a KLM Fokker 100/70?) the take off was carried out without deploying any flap - is this normal practise?

Yes, don't worry about it.

Yes this is normal the flaps on the F100 cause more drag than lift on take of. Many years ago I was the station engineer for KLM in Prague flying back to AMS in the jump seat and queried the flap call only to be told that the F100 did not use flap on take off, though I am sure at certain configurations an element of flap will be used.

Not true.

Certain aircraft, the F100/70 included, depart with 0 flap to give an improved second segment climb.

Methinks that you are both right. 0 flaps may (depending on a/c) give you a better 2nd segment climbrate, where the use of flaps can lower your v1 and ground roll. So both correct.

I have never flown a F70/100, but the F28 usually didn't need flaps for take off as far as I remember. At least in the sim I did my mcc on many moons ago.

And another type: The B767-200 has Flaps 1 certified for takeoff, that being LEDs only, with the TE flaps firmly in the up position. Used frequently at long hot fields with a heavy aircraft.

Not certified on the -300 series, though.
