It is my understanding that if both FADEC channel A and B pack it in, that the engine will shut down. Does it shut down, or does it just go to idle?

Shut-down. the engine will not have any fuel sheduling.

It's an interesting failure in the sim if given during T/O, as the ECAM actions are inhibited until 1500' / 2 min.

Makes for a bit of confusion if you don't think to select "Recall".

Actually as per FCOM, the engine will not shutdown. It will continue to operate. But engine indications will disapear (crosses). One must use the systems pages such as HYD, BLEDD and ELEC to monitor engine operation.
If the engine fails... Engine master OFF.

Now... shut it down or not? Captains decision...
Maybe using your ear to notice any increase, decrease in engine power. If you`re not satisfied with engine operation, in that case shut it down

I understood that it (being indecisive) just leaves everything as it last was operating. That leaves the pilot with the option of a still running engine or to shut it down to get rid of unwanted thrust.

There should be a manual covering this.

As always, tt depends.

A Dual Fadec channel fault covers a multitude of sins:
if something has knocked out the Arinc transmission back to the flight deck instruments, then it may keep running, it may even respond to manual throttle.
If something has skewered through the wiring loom, then it's anyone's guess what happens to the actuator torque motors , including the FMV torque motors, and all bets on the engine behaviour are off.
