Anyone care to enlighten me on how S.O's log time? And how the general system works ?

Depends on what they are doing, which seat, what authority they are working under etc etc.

Do they log anything when the captain and F.O are in there respective seats.....?
I've heard of company's employing Cruise S.O's what are they ?
