If anyone has any connections with ATC and controllers in Thailand, China and Japan, I'd be grateful for information. I'm planning a trip for summer of '08 and am looking for fellow ATCs to meet and greet (and maybe bum a meal or two!).

not somebody that I actually know, but there's a very keen photographer who works in ATC at Phuket Airport. The Tower is on top of a hill with a superb view over the whole airfield.
If you take a scan of www.airliners.net (http://www.airliners.net) and search for pictures from Phuket, any pictures you find looking down onto the aircraft on the runway (including looking down onto a 747!) will be his. All the pictures have a 'contact me' placing.
He, in turn, may have contacts in Bangkok.
