I'm new to the aircraft and wondered what headset is suitable.

Sennheiser Noise reduction from the HME models.
Try ebay, much cheaper.

My advice is go for the larger HMEC-25 CAP model- it is just sooo much better than the lighter models at keeping noise levels down.
