Compulsory if rather joyless reading:

IATA Security Manual, 4th Edition.

Annex 17 to the Convention on International Civil Aviation promulgated by ICAO.

As well as the obvious 'anti-terror' security that we are all aware of, there is also a security aspect of safety systems that you might want to consider, as well as the security of on-board information systems in these days of fly-by-wire etc.:

http://www.avsaf.org

http://aviation-safety.net

http://www.flightsafety.org

http://web.nbaa.org/public/ops/security/tfssp/

http://www.faa.gov/asd/standards/

http://www.faa.gov/aio/InfoSec/whoweare/

etc.
