Does anyone have any tips, advice or other useful info about organising an Fly-in?

e.g. who to inform, what to provide, do's and don't's, etc

We're going to need a bit more information.
If you just want us all to turn up to a free BBQ, just tell us the date. However, if you mean a major aviation event with displays, open to the public etc ...

Organise it well in advance so you can get the date in all the magazines- about 3 month lead time I think.
Check the events calendars for clashes, you can even look at last years as many events are on the same weekend.
Make sure it is free landings!
Choose an airfield that doesnt have lots of restrictions- operating times, noise problems, movements restrictions, council imposed slot times, near major controlled airspace.
Decide if its going to be an "air to ground" service- preferable unless its going to be a big event or other type of air traffic control. If you are going to have some Air Traffic control, make sure you have people who can cope ie like Chris that does the Popham events, not some of the other FISO controllers who cant cope with 6 in the circuit on a normal day and want to ask everyone their life story over the radio.
Make sure there is enough room to park the aircraft that you expect to come and that the ground is good.
Catering is important and can be very expensive, especially if the weather turns out bad!

Thanks for the advice.

It's just an idea at this stage, no firm dates or locations although North Weald was suggested as it would also serve the purpose of supporting the airfield in its current predicament.
