Why is it that Lufthansa's A321's have the IAE V2500 power plant and the A319/A320's in the fleet have the CFM56?
Surely it would make more sense to operate the one engine type across this fleet.

Why is it that Lufthansa operates Airbus A320/321 and Boeing 737 with simmilar range and payload ?
Itīs just a political deccision not to rely on a single source, neither for planes nor for engines. It may cost you more to have the qualified personel and the spares, but you shurely get better price offers, if the manufacturers knows there is another one. And in case something goes very wrong (some AD grounding a type of plane or engine) you have only half your fleet affected.
