Are EZY dropping this route as there seems to be no flights avadible for booking in the summer?

No, I don't think they are - if you try to book it and follow the links it seems to say that the release of summer seats is phased, hence the seats for BFS-AMS are not available just yet.

There are several other routes, such as EDI/GLA-AMS/BFS, even LTN, that are also not available yet.
