This topic has been discussed endlessly so I'm sure a search would give you some answers to questions you have.
I'm not trying to fob you off but it's late and I'm tired - I'd check out the LASORS (www.caa.co.uk) to check which flight training organisations can offer you what in respect of JAR courses. No one in SA can give you the entire package (some stuff still needs to be done in the UK) although you can do big chunks over in SA.
Regarding the eastern cape I'd check out Progress Flight Academy
www.flightacademy.co.za - only good reports on pprune.
They have a tie up with Bristol www.b-f-c.co.uk again only good reports about them in the wannabee sections.
Gotta mention FTC at Grand Central - a lot of bad reports in the past but now under new ownership.
