My understanding is the following for captains, however taxation is of course a personal matter.
BASIC SALARY
The basic salary is 102500 gross per year. In Portugal this amount is divided by 14 months.
So approximately 7321 gross per month (*14 payments)
VARIABLE PAY
Then you have your sector pay which is a bit more then 60 euros per nominal sector, of which ~65 euros is tax free per day, if you fly internationally.
On top of the sector pay you have holiday pay, positioning pay, simulator pay, and a few others that I can't think of right now.
For simplicity sake say something of between 25-30k per year of which 500 euros per month is tax free.
BENEFITS
(Pension, Lol, private medical insurance) 3500 euros per year.
BONUS
From 0% up to 20% of basic pay subject to company target / performance.
LOYALTY PAY
Up to 20% of basic for captain after 10 years in the company.
EASYJET SHARE BUYING SHEME
I figure on about 45% total tax deductions (11% NI + tax) married with one kid.
Bare in mind the Portuguese state is setup as a welfare state, not unlike some of the Nordic country's. And as such that might be one of the reasons for the high tax rate.
