I presume it is mainly for the connection to the U.S. flights, so that pax from India can get right onto their transatlantic flights. Considering that most transatlantic flights leave late morning / early afternoon, they schedule the India flights so that they arrive in the morning, therefore the middle-of-the-night departure time. The same is true for North Africa and the Middle East.
