We are about to write ours, best advice is to actually put down in form 1 - 99 what you actually normally do e.g. brief task specialist, check he is strapped in , cameras are attached etc etc

It is your manual and it is up to you how you do it. UK CAA inset even lnterested in checking or accepting manuals until something goes wrong.
The fact you already have an AOC means you have an SMS system so really SOP's are just a list of what you do for each task, keep it simple so it can't trip you up at a later date !
