I did my MCC in simtech. The ryanair sim is a proper 737 fixed base and not a FNPT2. that means the cockpit is smaller (real 737 size) than the Simtech one. the seating position is slightly different too, you feel a bit closer to the windscreen. It also has the real boeing thrust levers etc...
flyingwise, I didn't feel any major difference in the way the plane handles.
