After a preliminary search I cant find any one airline that can do all of the itinerary on one booking.

It's worth your while coming through Dublin to the US as you preclear US immigration in Dublin for all US bound flights. That does not apply to Canada bound flights so there's no benefit coming through Dublin to Canada. And as you point out there are no direct flights to Montreal from Dublin.
