is one appropriate 'salad' when doing proper BBQ, and it does have some green stuff in it:
Coleslaw
I don't know why, but the flavors of coleslaw and slow smoked pork complement each other very nicely. In fact a very popular BBQ dish is a pulled pork sandwich topped with coleslaw. Don't knock it if you haven't tried it - if the cook knows what they're doing it's wonderful
