As the examiner does not notify the revalidation by experience as he would do for a proficiency check, what happens then ?
Since the introductiion of JAR-FCL in 1999 Examiners have had to notify the CAA of all renewals and revalidations, including those by experience, and as the holder of the rating, you would have signed the form sent to the CAA!
If I apply for the licence conversion before I renew my IR ME & MEP, what about my expired ratings ? Will they disappear from my licence ?
Yes. Anything that is not current will go on the back and then you will have to pay for the re-issue of each and every rating when it is put back on the licence.

No, they are quite straightforward, so renew everything before any licensing action by the CAA. As you have a JAA licence, it is automatically an EASA licence, so all you have to do is have it re-issued at the 5 year point with all the relevant ratings current.
