I don't know that there is a perfect cockpit. Some of the role specific "wants" are mutually exclusive.

As a utility pilot my perfect cockpit would be 95% glass and a seat that sits half out the door like a 500. For many other roles, this would be a bad setup.

There are very few purpose built utility aircraft. The Skycrane, Kmax, Lama and the 500. Those four were built for utility with no compromises for multi-role capacities. For that reason those four continue to see a huge portion of the utility work world wide. Anything designed now a days is designed with multi-role capability and ends up being mediocre to good at everything, but excellent at nothing.
