Being honest, any employer who thinks you can book a holiday two years in advance, or at least know the dates, and expect the employees to give a firm notice of this, isn't an employer I wish to know. It's the employer asking an employee to inform them how long they wish to live for. Or to give dates for funerals in advance.

The holiday diary opens in april 16 for 2017 but via previous years its advised that all holidays dates are booked at least 1 year to be sure to get the dates that we wish and its a well known supermarket chain my fiancee works for but its mainly to make sure we both get the same dates approved for a holiday/s
