I am going to again recommend what I believe is the best all around book on this subject, and that is Flightwise, Volume 1, by Chris Carpenter, available at www.amazon.co.uk (the UK site has it, the U.S. one doesn't). The second volume is worth reading as well, Stability and Control.

For a less in depth but good book, I'd also recommend the Illustrated Guide to Aerodyamics, very good read, can't recall the author offhand, but Amazon has it as well.
