I can thoroughly recommend Hanks Aero Adventures.
We did a flying safari with them in 2012 that included 5 camps in South Africa, Botswana, and Zambia. It was truly superb.
Nick and Christina organise things brilliantly leaving you to pretty much turn up and fly. As an example of their completeness in the preparations you will be given a full briefing pack for each leg that even includes the appropriate landing fees in the local currencies!
They really are great organisers and superb hosts
