One thing I was wondering, how normal is it for a instructor to be independent and work at various flight clubs/ schools?
If you are experienced that is not a problem, but as a FI(R) you have to be supervised until you have enough experience to remove the restriction, many schools may not be interested in employing you if you are not prepared to commit to them. You cannot operate independently under EASA so your stuents will come via the school.
