DomyDom, I believe Florence and Seville were 2 likely routes mentioned by LAX LHR to be operated by Vueling next summer. And I seem to recall Santiago de Compostela being a possible destination for easyjet.
The routes you mention are all Southern Europe. Personally, I would also like MAN to develop more business in Eastern Europe and the Baltic states but some of those routes are already established from Liverpool. How much of a hindrance that is, I'm not sure.
