A sim ride has nothing to do with assessing a candidate's "professionalism".
It has everything to do with assessing a candidate's manipulative skills and trainability by (usually) placing the candidate in an unfamiliar aircraft for the SIMEX.
An insight into the candidate's "professionalism" is primarily assessed via the interview panel, and to a lesser extent in the sim briefing through interaction between the checkie and the candidate.
