Confuddled with conversions

Hi all, new to pprune

Ten years ago I got my FAA Cpl/me/ir and cfi in California, I notched up 500 hrs pretty quickly and then family issues required me to return to the UK, i havent had much flying time since but have started to look at getting back in the saddle recently. I am heading back over to the states for a holiday early next year and will revalidate everything once there but when it comes to converting to minimise costs i was looking at -

Bristol GS for the ATPL theory

then doing the practical CPL/IR conversion in poland/greece/iceland

Reading other posts it appears that this throws up an issue around where your license is issued as there are some saying you MUST do the IR in the UK and others saying that the IR is a rating and that its the CPL that MUST be done in the UK, which is correct and do either apply to conversions?

thanks in advance for clarification....TBH its starting to look easier to marry a mail order yank and get work in the states!
