First question,with step climb it would change remaining waypoint's predicted alts.If its constraint it would be deleted as overflown.
Second no,noway to change alt cruise in real if you wont do change to your fcu alt and revert the autopilot mode(no matter its manage or selected) just you may change your predictions at all.
