Lightbulb Atc - Sids And Stars

Please excuse my ignorance as I've asked a similar question before but I have a question regarding ATC intervention during the flight for you big iron chaps with an FMC.

If you depart on a published SID route, do you fly that route as planned or does ATC shift you round onto different headings etc for reasons of traffic avoidance or separation? How does that affect flying with the FD, as surely it'll be telling you to turn one way when you're turning another?

Also how does it work on the approach, as similarly the STAR will be programmed into the FMC and again the FD will be working against you??

And while I'm here, I flew with LH to BEY in an A319 recently - and noticed these little red-painted loops out on each wing surface. They're not very big, but they look like lashing points or something, got me wondering what they were?????
