They appear to be quite unclear whom they want to hire, as in my group they failed 5 people on day 3 with no clear or visible problem points, and all of these unlucky guys being current and experienced Boeing & Airbus CAPTAINS. ALL OF THEM!
So at moment it looks like EK is looking for submissive and unexperienced F/Os.
I think if you get the invite to dubai you are essentially hired... The rest is down to you during your week there. If they got to day 3, it would have been questions marks over them as a person not as a professional pilot. The bits you can't easily retrain. And that could be anything...
All the successful guys on my assessment drank beer with their daily 100 dhs EK allowance at the premier inn, those who didn't stayed in their room every evening, presumably on pprune
