As Bral said, you're supposed to create your manuals from scratch, adapted to your type of aircraft/operation. But that's only part of the job.
The swiss Federal Office of Civil Aviation has published a great guideline document on how the entire procedure goes (valid for Switzerland, but the requested points are basically the same in every EASA country) as well as all the required documents/manuals.
