In the past I have done several trips hauling Cattle on the 747 and the L-1011. It was our understanding that temperature and plenty of ventilation is critical for survival. I was told that the new procedure was to pack them very tightly in the pen so they Cannot Lay Down. This was to prevent the other cattle from laying on top of them thus Smothering them to death. If the outside temperature at the departure airport was extremely high and the A/C systems on the Aircraft were not working properly this would and could cause death even before departure. Deer and Pigs are also quite sensitive.
