It has been a while so I shall start you off and you will hopefully get better up to date replies.

For 34 it depends on your aircraft type or the words in your ops manual. We had "No turns below 300' " so that is when we started.

For the southern departures that is an interesting question. On the Jepp charts the 205kt restriction was printed in the frame of the page, not in the text. We assumed that the frame had been printed for the northerly departures and Jepp (or even Macau CAA AIP) had mistakenly used the frame for the southern departures and included a totally inappropriate speed restriction.

In practice, we would ask for "250 knots operational" as soon as we contacted HKG approach and were always given it. If you are using MCM as an airport for your sim checks, just confirm with the examiner in the briefing what speed he expects and can you expect higher, and he will normally agree.

If you are doing an engine failure on take off for the sim check, then you can tell "ATC", not ask, that you are accelerating due operational.
