Both Panshanger and Henlow are excellent places to learn, fly from and meet helpful people who will share their experiences. Other than the places already mentioned, there is Stapleford as well. I'd go with the ones closest to you, then it's not too far to go home if the weather prevents your flight happening, or not too far when the sun comes out and you can get a last minute slot for a lesson or something.
