The hours you fly count towards experienced required.
Yes you may study the theory in one country and to the practical training in another.
If you have started a CPL training in one FTO in an EASA country, and you wish to complete your training in another FTO in another country, I think that hours done in the first FTO might count, see in CAP 804 for the answer.
