No firsthand experience, but I have read several articles that have reported that this place has top-notch instructors and equipment: http://www.fightercombat.com/ It's also (relatively) inexpensive, and has bases in both Ontario and Arizona.

I believe (?) that their safety record is excellent, although on April 2, 2002, they did have a collision of two Extra 300's on takeoff at the US Naval Test Pilot School (Pax River) ... one person was killed.
